...is just the best! i've tried store bought pesto but they just don't cut it for me. i just don't like the flavor & i can tell most of them don't use pine nuts, they use walnuts (walnuts & i don't get along very well).
so, i make my own...
Ingredients
2 cups fresh basil leaves
1/3 cup pine nuts or walnuts (i use pine nuts)
2 or 3 garlic cloves
1/2 cup extra virgin olive oil (i use light)
1/2 cup Romano cheese (is the best) or Parmesan cheese
using a food processor, combine basil with pine nuts & pulse several times. (be sure to wipe around bowl after each pulse)
add garlic & pulse a few more times.
slowly add olive oil while food processor is blending ingredients.
add grated cheese & blend until creamy smooth.
you can add a little salt & pepper to taste after all the ingredients have been blended well.
store in an air tight container & add olive oil to to the pesto to preserve it.
keeps for 5 to 7 days in the fridge.
my kids LOVE it. hell, my daughter will just eat it by the spoon fulls if you let her. you'll never buy store bought pesto again...SERIOUSLY!!!
