this was really tasty!! i loved how refreshing & light it was, yet filling at the same time. instead of roasting my mushrooms, i sauted them in olive oil, salt & pepper. it was a nice mix of warm with cold crisp greens & feta cheese. the toasted pine nuts was the perfect crunch & the dijon dressing was yum!
hubby gobbled it all up & the kids ate the mushrooms :) will be adding this to our list of favorites.

last Thursday, i splurged & took the kids to Kings Dominion for the day & they had a BLAST!!!
Ty road up front on a roller coaster...
the log rides are one of Ty's favorite, so we couldn't pass it up. us before we got soaked...Corinne didn't like it too much...lol.

Ty won a minion & he & i played 5 or 6 more times to win one for Corinne but we did not luck out. but he was super sweet to let her sleep w/ his minion at bedtime :)
i wanted to go on the ferris will so bad, but Ty is afraid of heights, so we didn't. i even tried to trick him but he caught on...lol!

after we left KD, we headed up north, past home for a trip at the Lego store. yes, crazy huh!? i had promised them we'd go to the Lego store & i didn't want to go Friday, since it was suppose to rain that day. so, the kids were happy to get some Lego toys, which were cheaper than at the exhibit ;) it was about 815 pm or so by the time we got home. heated them up a quick meal, since we missed out on dinner, then off to bed we went!
here they are Friday morning & they played at the kitchen table for HOURS!!! it was WONDERFUL!
i picked up the Space Needle for myself, a place i hope to visit again some day!

Sunday, kids woke up excited to celebrate Easter. they searched for their baskets that their dad hid. Ty found his before i even made it downstairs & i sorta helped Corinne find hers.
did our egg coloring that morning after breakfast...
they feasted on WAY too many sugary treats, it was driving me crazy...lol
LOVE LOVE this picture...my MIL made the dress for Corinne & she picked out her new sandals to go w/ it.
then the inevitable happened...there was an issue w/ who found the silver & golden eggs first. Ty found the silver egg first. Corinne wasn't too happy about it, so he gave it to her so he could find the golden egg instead. but i tried hard, while snapping away to help her find the golden egg first, but alas...
Ty found the golden egg...note the silver egg falling out of Corinne's basket as she's highly upset that Ty found the golden egg. Ty being a little stinker about it....pure excitement in his eyes as his sister is yelling his name out, she was so mad at him.
she was HOT! poor baby girl...LOL.
in the end, they were both happy to find money in their silver & golden eggs & had a nice time overall. she still hasn't forgiven him though...as she is standing right next to me as i type up this blog post...lol.

last week the kids & i went to DC to check out the Lego exhibit in the National Building Museum. it was pretty small & really cool to see the structure built out of Lego's.
Ty being silly...
waiting for the doors to open & of course, kids not keeping a straight face...lol
for each structure, the amount of Lego's & amount of hours/days it took to create, was displayed.
there were three rooms, the exhibit, the Lego play room & the store...Corinne had a blast playing w/ the Lego's. all the kids were building some amazing things. it was loud & crazy, but so fun.
Ty had a bit of an attitude by the time we left the museum, b/c i wouldn't let him buy anything. i felt it was a little more than what you paid at the Lego store...as you can see, Corinne was trying to hold up his face so i could get a picture of them together...LOL...love her!
i figured we would head off to lunch somewhere, but the kids wanted 'DC street hot dogs' as they call it...LOL. so that is what they got & then we cooled off at the National Gallery of Art Sculpture Garden.
felt so so good...Corinne managed to get her pants wet, but it was hot enough they dried off by the time we headed back to the car.
before hitting the road, they had to have their Spongebob ice pops...LOL.
it was a good day. the weather was perfectly warm, lots of sunshine! loved it & the kids enjoyed being in the City. Corinne wanted to see more museums, but it was already late. we made a pit stop to Trader Joe's on the way home, love that store. had to stock up on fruits & veggies & pizzas!
Corinne loves DC & enjoys the museums as much as i do...foresee her & i taking a trip up there during the week sometime with just the two of us.

enjoying a little Spring break around here. it's nice having this time off from the normal routine. SO nice! instead of go away on family vacation, decided to stay home & do mini road trips each day. something fun for & w/ the kids.

last week, Debbie Hodge shared a link on Facebook to this crazy cool lego website, a lego a day & it's addicting!!!! i love it. it's so cool & creative, just awesome!!! i'm not even into lego's in that way, but i am now & ever since i showed it to Ty, he had to create a few of his own scenes. here is just one...
a bit violent, ya think?! ha, a little too much Prince of Persia he's been watching i think ;)

this is delightful! toasted italian bread topped with sauted red & yellow bell peppers, gorgonzela cheese, capers & olive oil! can't just have one, nore two...more like three & four which is why this is only made once in a blue moon. so good!
