this was really tasty!! i loved how refreshing & light it was, yet filling at the same time. instead of roasting my mushrooms, i sauted them in olive oil, salt & pepper. it was a nice mix of warm with cold crisp greens & feta cheese. the toasted pine nuts was the perfect crunch & the dijon dressing was yum!
hubby gobbled it all up & the kids ate the mushrooms :) will be adding this to our list of favorites.
